What an amazing little treat!

1/2 cup almond butter

1/4 cup of milk of your choice

2/3 cup coconut sugar

2 eggs or 2 flaxseed (linseed) eggs

1 tsp vanilla extract

1 cup shredded zucchini

1 cup rolled oats (blitzed into flour)

1/2 cup rolled oats

2 tsp baking powder

1/2 tsp Himalayan pink salt

60g dark chocolate chopped


Whisk together milk, almond butter, coconut sugar, eggs and vanilla.

Stir in zucchini

Mix in oat flour, oats, baking powder and salt

Fold in chocolate

Spread batter into a greased baking dish

Bake 20-25 mins 175 degrees celsius

Cool for 30 mins
