Thoughts will soon be turning to back to school, and the endless dilemma of what to put in the kids lunch boxes.

This recipe is nut free so ‘school friendly’ and is full of nutritious ingredients so they may not even realise it’s a healthy treat!

Makes 20 bars

1 cup (170g) dried  pitted dates

1 cup rolled oats

1/3 cup raw cacao powder

1/4 cup sunflower seeds

2 tablespoons sesame seeds

2 tablespoons chia seeds

1/3 cup coconut / soy or oat milk

2 teaspoons vanilla extract

1 cup shredded coconut

1 teaspoon cinnamon

1 tablespoon maple syrup

2 tablespoons melted coconut oil

 

Soak dates in boiling water for 10 minutes then drain.

Place all ingredients in food processor and blitz to a doughy consistency.

Press into lined 16x24cm baking dish and place in freezer to set for 2 hours.

Slice and serve.

Keep stored in fridge up to 1 week and freezer up to 3 weeks.
