With mandarins everywhere at the moment, here is an easy recipe to create using these sweet seasonal favourites.


Ingredients, serve 6 slices:
🍊1 egg
🍊2 egg whites
🍊50g plain Greek yoghurt
🍊1 mandarin, peeled
🍊1/2 tsp baking powder
🍊1 tsp (15ml) coconut oil
🍊30g coconut flour
🍊40g almond meal
🍊Sweetener of choice, to taste (try coconut sugar, xylitol)

🍊60g plain Greek yoghurt
🍊35g light cream cheese
🍊Sweetener of choice, to taste (try coconut sugar, xylitol)
🍊A little bit of mandarin skin, chopped finely
🍊10g shredded coconut

1️⃣Pre-heat oven to 180°C/350°F.
2️⃣Blend all the ingredients for the cake including the mandarin. Pour mixture into a deep baking dish (about 20x9cm) and bake for 25-30 minutes.
3️⃣To make the frosting, combine the Greek yoghurt with the cream cheese and sweetener of choice, to taste. Spread this over the cake, sprinkle the mandarin skin and shredded coconut and ENJOY!
