We’re going for an easy baking idea today with this amazing chocolate superfood bar from @breakfastnbowls.

This one is perfect for work snacks, lunchbox or just a special treat at home.

With a few tweaks and substitutions, this can be adapted to be gluten free and / or vegan and even organic or non-organic.

Recipe

1/2 cup rolled oats

1/2 cup puffed quinoa

1/3 cup almonds, chopped

1/3 cup hazelnuts, chopped

1/4 cup pepitas (pumpkin seeds)

1/4 cup linseed meal (flaxseed meal)

1 tbsp chia seeds

1/3 cup maple syrup

1 tbsp coconut oil, melted

Pinch fine pink salt

 

Method

Preheat oven 180 degrees. Line a baking pan (20x20cm) with baking paper.

Combine all dry ingredients in a large bowl and combine coconut oil and maple syrup.  Pour liquid over dry ingredients and stir until coated.  Transfer to the baking pan and press down firmly.  Bake for 25 mins or until golden brown.  Let cool.

 

Topping

180g dark chocolate

1 tbsp coconut oil

1 tbsp goji berries

1 tbsp pistachios, chopped

1 tbsp pepitas (pumpkin seeds)

1 tbsp cacao nibs

Pinch of fine pink salt

Melt chocolate and coconut oil together then spread evenly over the base then sprinkle on the toppings.  Refrigerate for 1 hour before cutting up into bars.
