We haven’t had a recipe for a few weeks, so it’s time.
This one is very simple to make and perfect for lunchboxes, to share at work or just a treat on the weekends!

Recipe- Heat oven 170C (fan)
500g Frozen blueberries
1 Tbls Tapioca starch
place blueberries into a bowl and add tapioca starch. Combine well. Put aside

Base-
3 Cups rolled oats (approx 300g)
3/4 Tsp baking powder
1/4 Tsp pink fine salt
Place above ingredients into a processor and pulse into a coarse flour.
Next add-
1/4 Cup Almond butter
1/4 Cup coconut sugar
1 1/2 Tbls pure maple syrup
1 Tsp pure vanilla extract
Zest from 1 Lemon
Place into a lined baking tin and press down firmly.

Now for the crumble:
1 Cup rolled oats
1 Tbls Almond butter
1/2 Tbls pure maple syrup
1 Tbls coconut sugar
Drizzle of pure vanilla extract .
Place ingredients into a processor and pulse, till mixture resembles large crumbs.
Scatter over the blueberries and gently press down.
Place in oven for 40 mins.
Take out and allow to cool.
Slice into squares and enjoy!
